Honey processing involves removing the cherry peel from the coffee while leaving the flesh intact. The coffee is then left to dry under the sun, where the flesh or 'mucilage' becomes sweet and sticky, hence the name of the process.
As the coffee dries, the coating on the outside starts to oxidise and darkens in colour. The darker the honey, the more intense the flavour of coffee. Red honey represents a mature stage in the honey process chart, where you can expect sweet caramel, floral notes creating a well-balanced flavour profile.
