Lica Coffee Estate is a specialty coffee farm located in the high-altitude mountains of Mae Daet Noi, Chiang Mai. Led by producer Aten Somboonkumchoo, the estate focuses on sustainable, shade-grown cultivation and experimental processing to elevate the quality and character of Thai coffee.
For this lot, fully ripe Catimor cherries are carefully hand-picked and placed in sealed anaerobic tanks with pieces of fresh mango. The coffee cherries and mango are co-fermented for 144 hours under controlled temperatures.
During the extended fermentation, natural microorganisms slowly break down sugars from both the coffee cherries and the fruit. This develops tropical fruit complexity, greater sweetness, and an exotic character while preserving clarity in the cup.
After fermentation, the cherries are sun-dried on raised beds for 32 days to ensure slow, even drying and greater stability.
Best enjoyed as filtered coffee.
