This Gayo is grown beneath the forest canopy at 1,100–1,400 metres. Hand-picked at its peak ripeness before a careful wash and 36-hour anaerobic fermentation to unlock delicate aromatics. The beans are then dried slowly for 18 days in the cool Doi Tung mountain air, letting the honey process build a natural depth of sweetness.
The result is vibrant and layered — pineapple and guava up front, a winey brightness, and a soft hint of cinnamon on the finish.
Best enjoyed as a filtered coffee.

Pricey for an everyday coffee, but totally worth it if you take time to relax and enjoy it. I use Certified Good for 9 cups out of ten, and I love it. And if I end up slurping it while at my desk no harm done. But this one is to be savoured at each mouthful. If Certified Good is my vin de table, this one is my fine wine.

It has a fruity aroma with notes of pineapple and guava.
Although it seems bright at first, the honey process brings a gentle sweetness and a well-balanced, rich flavor.

Smooth, naturally sweet, with light fruity notes from the honey process. Clean, aromatic, and very easy to enjoy. Delicious coffee with a hint of cinnamon, very pleasant taste.
