Meet Doi Tung Gayo Natural, a coffee with a story worth telling. In 1988, the Princess Mother looked out over a bare hillside in Chiang Rai and set out to replant it, turning old poppy fields into a forest and a livelihood for the community. Today the Mae Fah Luang Foundation grows this coffee at 1,000–1,500 MASL, processes it at its own facility, and pays every farmer fairly. Natural processing at altitude gives Gayo a bright, winey cup that's full of fruit. Expect passion fruit, pink guava and tropical fruit up front, with a cocoa-nib finish. Best enjoyed as a filter coffee.
