This Gayo is handpicked at 1,100-1,400 masl. from the forest of Doi Tung in Chiang Rai. After a quick clean, the cherries are rested for 36 hours of cool anaerobic fermentation at 20–25°C, before drying under mountain air for 25 days.

The cup is bold and fruit-packed: passion fruit and guava lead the way, with tropical layers, a winey edge, and a cocoa nib snap to finish.

Best enjoyed as an espresso.
